“ While on an 11-state road trip, I stopped for the night in Princeton, IN. When I checked into my hotel, I asked the clerk about a restaurant I had seen on Yelp with excellent reviews. Unfortunately, THAT restaurant was one of several that are closed on Mondays. She then recommended a few places, including Guacamole Grill. I drove right past it at first. It's in a strip mall next to the local movie theater. It was not busy and I was seated right away in a booth. The complimentary chips and salsa were good, but they only had a very limited selection of beer. I was dying to try the "World's Best Guacamole," as touted on their signage and menu. It was pretty darn good! I assume it's not the "world's best," but it hit the spot and was full of fresh ingredients and perfectly chilled. The shredded beef chimichanga was fire! It was packed full of spiced shredded beef and topped with a queso blanco. Very good! Nice beans and rice, plus guacamole salad to make it a meal. The service was decent. My server got distracted flirting with another customer for entirely too long, but eventually returned to give me the bill. Not much happening out in these parts so I gave her a pass for making me wait so long. ”
